Roasted Sweet Potato & Hazelnut with Cranberry Salad
This recipes Roasted Sweet Potato & Hazelnut with Cranberry Salad is great If you are entertain any guest .
This salad complements any main meal , you can served roasted sweet potato hot or cold the smoke paprika add the smoke taste .
The Roasted Hazelnut adds a crunch, bite into juice cranberry & spice taste of the rocket & sweet red onion , then toss with crumble feta cheese add the celebration in your mouth !
Drizzles with this dressing just add to success of this salad … Enjoy
1 teaspoon seed mustard
salt & ground black pepper
3 teaspoon balsamic vinegar
1 kg sweet potato
3 tbsp olive oil
3 tblsp smoke paprika
1 large Red Onion, thinly sliced
300g baby Spinach & 100g Rocket
washed & pad dry with a paper towel
1red capsicum, thinly sliced
1 med cucumber
3 shallots, thinly sliced
1 1/2 cup hazelnut
Roasted
1/2 cup dried Cranberries
200g feta cheese
, crumbled
2 tblsp extra light virgin olive oil
Method :

Peel sweet potato & cut into 2cm cubes, place into bowl, drizzle with about 3 tablespoon olive oil & season with salt & ground black pepper & smoked paprika. Bake sweet potato in preheated oven 200*C for 25 mins or until golden brown & tender, allow to cool slightly

To make the dressing ; Blend extra virgin olive oil , balsamic vinegar, seeded mustard & salt & ground black pepper.

Toss sweet potato, spinach & rocket leaves with dressing to combine

This recipes is a good base mayonnaise for all your yummy Cesar Or Aioli or Seafood sauce & much much more you can do with this good mayonnaise recipe .
The secret success to this mayonnaise is a light oil & not a olive oil this make your mayonnaise too heavy .
Add the warm water at the end of the mayonnaise takes the egg taste away, gives you a velvet smooth mayonnaise !!!
2 egg yolks
2-3 teaspoons white wine vinegar
1 cup Rice bran oil
white pepper & salt to taste
2 tblsp warm water
Method :
- Place the egg yolks, vinegar & seasoning in the food processor Or blender. Using the pulse action, process for 15 seconds until blended.
- with motor running, add oil Slowly in a thin steady stream until all oil is added & mixture is thick & creamy.
- Tips: This mayonnaise is used for all my mayonnaise base.
Like my Summer Classic Coleslaw Or Aioli which is 3 cloves garlic mayo taste great with any Crumbed seafood or Fish ,meat, crumbed chicken.Really nice when you roasted garlic mashed, then add to the mayo. I have made a Basil Aioli
( 1cup firmly packed fresh basil leaves) taste great served with lamb.
Seafood sauce : dash tomato sauce , dash Worcestershire sauce, 1/2 lemon juice, 2to 3drop hot chill sauce
Caesar dressing: fresh 1/4 cup Parmesan cheese, 1 clove garlic ,dash Worcestershire sauce 2 anchovies

This Classic summer salad recipes tasty great with any BBQ meat.
This recipe I pick up from a Germany chef when I was about 2 year apprentice. I have made some little changes over the years ,but Germany’s know there cabbage !!!
I know this is the Best Coleslaw recipes you will every tasty Guaranteed
1/4 small cabbage, finely shredded
1 med carrots, grated
1 stick celery, finely chopped
1 small green capsicum, finely chopped
1 grated onion
1 green apply, peeled & sliced
1/2 cup white wine vinegar
2 tbsp brown sugar
2 tbsp vegetable oil
1/4 cup cold water
1/4 celery seed
2 tblsp mayonnaise
2 tblsp sour cream
dash paprika
salt & pepper
method :
- Add Peeled apple ,green pepper & onion & season with salt & pepper. Set aside.
- Place vinegar, brown sugar , oil water celery seed in a saucepan. Cook 5 minutes over medium heat.
- Pour Marinade over cabbage , toss until evenly coated. Add remaining ingredients & mix again. season well.
- Marinate 3 hrs in refrigerator befor serving.
- Tips: I add broccoli chopped very finely & baby spinach . Try my home made mayonnaise
