Heavenly Light Pineapple & Coconut Cookies
This Cookies Recipe Pineapple & Coconut are so light & tasty.
The biscuits are rolled in coconut just give the biscuit extra delicious flavour, then bite in the pineapple so scrumptious & summer!!
have to say this is “one of my favourites cookies ”

125g Margarine
450 g pineapple crusher
1 cup caster sugar
1 cup Desiccated coconut
1 egg 2 teasp grated lime,lemon or orange rind
2 cups self-raising flour
2 tablespoon Pineapple juice
makes about 35 biscuits
Method :
-
Cream margarine & sugar until light & fluffy. Add the egg , beat well.

Add the coconut & lime rind , mix well.

Stir in sifted & Pineapple juice . Roll mixture into small balls the size of a walnut. Press one side of the balls finely chopped peel. Place on lightly greased oven tray

Baked in 160*C / 325*F oven 12 minutes or until light golden brown

250g cup margarine
1 cup caster sugar
3 tablespoon milk
2 tablespoon vanilla essence
2 1/2 cup self – raising flour 12 peppermint candy canes
Method : Makes 15 to 20
1. Preheat the oven at 120 *C & grease the baking tray.
2. Cream the margarine & Sugar add milk, vanilla & blend in the milk & vanilla . Mix in flour .If you what you can 1/2 the mixture add 1/4 cup Milo ( or 2 tblsp cocoa power, sifted)
3. Roll into balls & flatten place onto the baking tray. Lastly add chopped candy canes onto the cookie 4. Cook slowly to prevent browning. Cook for 25 mins

200 g margarine
1 cup castor sugar
1 1/2 cup rolled oats
1cup Banana mashed ( 2 to 3 ripe )
1 eggs
2 tblsp cinnamon
1/2 teaspoon nutmeg or mace
1/2 teaspoon ground cloves
1 teaspoon baking powder
1/2 cup low Gi cane sugar sprinkle on top

150g margarine
1/3 cup caster sugar
395g can sweetened condensed milk
2 cups self raising flour
250 g chocolate chipschocolate chips
1 cup coco pops or 2 cups coco pops & no rice bubbles
1 cup rice bubbles
1/2 cup chopped nuts
Method :
- Preheat oven at 180*C & greased tray
- Beat margarine & sugar until creamy. Beat in sweetened condensed milk
- Stir in flour then chocolate chips, coco pops, rice bubbles & nuts, mix well
- Roll heaped tablespoonfuls of mixture into the coco pops
- Place on prepared oven trays and bake 15 minutes until golden

$250 Chocolate Cookies Recipe
I received this email from a friend of mine and thought it would be perfect to share with ya’ll!
It reads as follows;
My daughter and I had just finished a salad at a Neiman-Marcus Cafe in
Dallas, and we decided to have a small dessert. Because both of us are such
cookie lovers, we decided to try the “Neiman-Marcus Cookie”. It was so
excellent that I asked if they would give me the recipe. The waitress said
with a small frown, “I’m afraid not, but you can buy the recipe.”
I asked how much, and she responded, “Only two fifty-it’s a great deal!”
I agreed to that, and told her to just add it to my tab.
Thirty days later, I received my VISA statement, and the Neiman-Marcus
charge was $285.00! I looked again, and I remembered I had only spent
$9.95 for two salads and about $20.00 for a scarf. As I glanced at the
bottom of the statement, it said, “Cookie Recipe-$250.00″. That was
outrageous! I called Neiman’s Accounting Department and told them the
waitress said it was “two fifty”, which clearly does not mean “two hundred
and fifty dollars” by any reasonable interpretation of the phrase.
Neiman-Marcus refused to budge. They would not refund my money because,
according to them, “What the waitress told you is not our problem. You have
already seen the recipe. We absolutely will not refund your money at this
point.” I explained to the Accounting Department lady the criminal statutes
which govern fraud in the state of Texas. I threatened to report them to the
Better Business Bureau and the Texas Attorney General’s office for engaging
in fraud. I was basically told, “Do what you want. Don’t bother thinking of
how you can get even, and don’t bother trying to get any of your money
back.” I just said, “Okay, you folks got my $250, and now I’m going to have
$250 worth of fun.” I told her that I was going to see to it that every
cookie lover in the United States with an e-mail account has a $250 cookie
recipe from Neiman-Marcus…for free. She replied, “I wish you wouldn’t do
this.” I said, “Well, perhaps you should have thought of that before you
ripped me off!” and slammed down the phone. So here it is! Please, please,
please pass it on to everyone you can possibly think of. I paid $250 for
this, and I don’t want Neiman-Marcus to EVER make another penny off of this

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine powder. Cream the butter
and both sugars. Add eggs and vanilla, mix together with flour, oatmeal,
salt, baking powder, and soda. Add chocolate chips, Hershey Bar, and nuts.
Roll into balls, and place two inches apart on a cookie sheet. Bake for 10
minutes at 375 degrees. Makes 112 cookies.
Even if the people on your e-mail list don’t eat sweets send it to them anyway and ask them to pass it on.

This Easy munchies peanut butter cookies, are so easy & fast even my children help to make these biscuits .
So nutty & Healthy but nice all at the same time.
Great for there school lunch box or if you have the munchies !!!
This recipe one my children favourites they just taste so scrumptious .
1 cup self-raising flour
1 cup coconut
1/2 cup low GI sugar
1 cup rolled oats
1 cup peanut smooth butter
1/2 cup golden syrup
1/2 cup honey
1 cup water
200g peanuts,chopped
Makes about 45 Cookies
Method :
- Preheat oven 160*C/325*F .
- On a tray add rolled oats & coconut & toasted until light golden brown.
Large mixing bowl add sifted flour ,
Good Grips Flour Sifter sugar ,coconut & oats.
- Double boil pot add the peanut butter , golden syrup & water, Stir on low heat until peanut butter & syrup has melted & well combine.
- Add the peanut butter mixture to bowl with the flour, stir with a wood spoon until well combine.
- Roll mixture into balls
- Place the balls about 5cm apart, on lightly greased oven trays.
Cook for about 12 mins or until golden in colour.

- Per heat oven 150*C / 300 *F And grease the Baking trays
- Cream butter & sugar & beat in the egg add oil. Thoroughly blend in the flour & cocoa.
- Fold in dark & white choc / chips .
- Shape into balls & flatten onto baking tray .

Quick & easy Banana & Oats Cookies for hungry kids !!!! The cinnamon sugar on top just make the cookies extra scrumptious. This cookies well go fast they are absolutely delicious irresistible cookies !!
1 1/2cup S.R Flour
200 g margarine
1 cup caster sugar
1 1/2 cup rolled oats
1cup Banana mashed ( 2 to 3 ripe )
100g min marshmallows
1 eggs
2 tblsp cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking powder
Method : makes 30 cookies
- Get your Stand Mixer
to started Cream margarine & sugar beat until sugar has dissolve add eggs one at time .
Add the mashed banana & spices beat until creamy.
Fold in oats , flour & min marshmallows & baking powder .
- Rolled the cookie mixture into a ball .
If the cookies mixture is to wet add 1/2 cup of flour.
- Rolled the cookies into cinnamon sugar.
Spare the cooking tray & place the cookies on the tray.
- baked on 190*C / 380*F for 15 mins.
- TIP : Cinnamon sugar 1/2 cup caster sugar & 1tblsp cinnamon sugar
